"Brandada Bacalao" would normally be a pretty traditional Spanish or Portuguese dish- brandade of salted cod. You can probably tell where this is going- nothing is normal here. Instead, we have before us something like puffed rice mini taco shells filled with black truffle slices and a bacalao emulsion.
